Ingredients:
1 stick of salted butter (room temp or melted is fine)
3/4 cup brown sugar
1 1/2 tsp vanilla extract
1 large egg at room temp
Splash of heavy cream
1 1/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
Granulated sugar on the side to roll the dough balls into
Frosting:
4oz of full fat cream cheese at room temp
2 tablespoons unsalted butter
1/2 cup (or more, per your preference) powdered sugar
1 tsp vanilla extract
For topping
Strawberry preserves/jam
Fresh chopped strawberries
Crushed graham crackers
Start by creaming together the butter and sugar. This can be done with both an electric mixer or by hand.
Add in your vanilla extract, egg, and heavy whipping splash. Mix together until full incorporated. Then, add in your flour, baking soda, and baking powder. Mix until you just lose sight of the dry ingredients in the dough.
I used a small ice cream scoop to section out dough balls that made about 20 total. Set these in the fridge to chill for about 30 minutes.
Once your dough has chilled, roll the balls into a little granulated sugar and place onto a lined baking sheet.
Bake at 350 for about 15 minutes (and you can go up to 17 minutes if necessary).
For the frosting, cream the cream cheese and butter together.
Add in the vanilla and powdered sugar, and mix until well incorporated.
Once your cookies have cooled, scrape or pipe on the frosting.
Add a smaller layer of strawberry jam, and then top it off with fresh strawberries and crushed graham crackers.
