Preheat to 350 F and bake for 38-42 minutes (until golden and bubbly).
For the batter:
1 1/4 cup flour
1 1/4 cup sugar
1/4 cup milk + 1 tsp vanilla extract
1 egg yolk
Pinch of salt
5 tablespoons of cubed, cold unsalted butter. Use half to mix into dough and half to spread over the top of the batter
+ granulated sugar or sugar crystals to sprinkle over before baking
For canned peach filling:
2 15 oz cans of sliced peaches in juice/syrup (one can drained of the juice)
2 tablespoons brown sugar (only *if* you’d like more sweetness!)
1-2 tsp cinnamon (to your taste)
1/4 tsp nutmeg
1 tablespoon flour
For fresh peach filling
8-10 peaches (skin peeled) sliced into eighths
A squeeze of lemon juice
1/2 cup granulated sugar
1/4 cup brown sugar
1-2 tsp cinnamon (to your taste)
1/4 tsp nutmeg
1 tablespoon flour
